On the home page of Gibbon, we have the Student Applications button which we do not want to use, however after turning off “Enable New Admissions Page” under admissions setting, the button still persists and I am unable to find how I disable it.
Any help would be appreciated!

My apologies for this issue, it looks like a bug that has cropped up this past version as we moved from the old application form system to the new one.
If you go into User Admin > Manage Permissions, and look in the User Admin module, you should see an Application Form Settings permission that is likely turned off for admin. If you turn that back on, you should be able to access User Admin > Application Form Settings, and turn off the Public Application option. Sorry about the confusion with this setting.
