How do you add the currency if not on the list?

No problem, we are happy to help : ) This change has been made and pushed to our v25 branch in the commit linked below:

https://github.com/GibbonEdu/core/commit/9b57e3a5e8131271c3f8906e3cdb1d3354921170

v25 is due for release on January 20th 2023, but you can take the change to the FormFactory.php file and apply it to the matching file in your v24 (or earlier) installation to enjoy this change now.
