Eventually I managed to install Gibbon using Softacolous.
I also uploaded the /gibbon/i18n/it_IT/LC_MESSAGES
folder with the .po and .mo translations
But the dashboard is still in English!
How could I shift to Italian?

The only way to force Gibbon to Italian was delete the \i18n\en_US\LC_MESSAGES\ folder.
Now eventually I see Gibbon in Italian!
