We use the Behavior part of Gibbon to track plagiarism cases. Is it possible to add custom behavior descriptors, or even just to add plagiarism as one of the choices?

Yes, in School Admin > Behaviour Settings you can edit the available descriptors as a comma-separated list.

No worries, there are tonnes of settings! I I have more than once forgot about a setting when I was likely the one who programmed it
