well got it fixed used SSh to edit and save php.ini as root user and that fixed the issue with the max_input_vars
another issue i was facing when checked the error logs showed systemsettings.php line 60 when I checked the same it had to do with the absolute path. I had set my absolute_path to /wwwroot/sitename but it should have been /www/wwwroot/sitename

Hi dont know if this is helpful. I am not an expert on the topic but i have done the same last year using the module of moodle found in the extend section of Gibbon. Gibbon users can login into moodle with the the same username and password once the moodle and gibbons database sync is done. And in moodle there is a plugin to integrate jitsi for video conferencing. (jitsi.org) https://moodle.org/plugins/mod_jitsi
For security only the users registered in gibbon can login to the moodle but u have to do the grouping in moodle. The drawback is moodle uses a lot of resources and the jitsi module has to be installed on your moodle sever hence bandwidth consumed will be a lot.
Guess there may be better ways using sign in with google and then link it to google meet, or sign in with microsoft and share a ling with miscrosoft teams. But again u will have to do the setting up of classrooms etc.
